You will need:
           1 cup sugar
           2 cups pecans
           1 1/2 cups Margarine (Butter will not work)
           1 Box Graham Crackers

Cover a large cookie sheet with foil, including the sides.
Break the Graham Crackers in half and cover the entire cookie sheet with them.

Preheat oven to 300 degrees.

In a Large Saucepan, melt the margarine and sugar then pour in the pecans. Bring it to a boil, stirring CONSTANTLY for 5 minutes. The mixture will become a little fluffy. This is good. 5 minutes will seem like a long time but hang in there. Don’t go over 5 minutes.

Spoon and spread this mixture over the graham crackers, quickly.
Bake for 12 minutes at 300 degrees.
Remove from oven and allow to cool and then remove from cookie sheet.  Yum Yum!

  This is a recipe that I make for my Father for Father's Day and Christmas, it is his very favorite! I call them "Cowdaddy's Cookies"  I also made these for my husband on one of our first dates. I took a can of them to him at the place where we met to hear some live music and some songwriter friends of ours. People kind of helped themselves and before I knew it, David, my date then, husband now, was eating crumbs. This is the first recipe ever posted on my website. It was posted on day one... 09/12/10
